Under Pressure

I’m on vacation….and I should be marking papers….but instead I finally got around to dealing with the stockpile of chicken and turkey backs and necks that I have in the freezer waiting to be turned into stock…and turned it into stock. And since I treasure my freezer space and hate putting stock into plastic bags, I pressure can it in quart jars…..always ready to make a quick pot of soup ☺️

Ten quarts of golden goodness jarred and preserved in the pressure canner and happily placed onto the pantry shelves.

And I had one jar of chicken stock left from my last batch, added two jars of corn stock to it, and the two oldest jars of corn kernels from the cobs that were used to make that corn stock, and made a nice pot of corn chowder. A quick batch of buttermilk biscuits and a comfort food dinner was had.
