I love winter for a lot of different reasons, and one of them is warming winter soups. Some time in the distant past, Sunday became the day of the week that I cleaned out the fridge and made a big batch of soup with whatever was at risk of going bad and made sense to put into a pot of soup. And so “Soup Sunday” was born.
Last week was an amazing pot of carrot and leek soup, and this week is a pot of potato soup…..basically it’s like liquid potatoes with flavours of thyme and pepper and a silky richness with the addition some heavy cream… and it is yummy!
