Peace Out (Day 243)

Ahhh….I’ve made it to the end of the produce I bought for canning.

I didn’t say I’m done…..but I have finished the majority of what I set out to do, with a couple of additional little side projects tacked on.

Yesterday I pressure canned a few quarts of vegetable stock made from the trimmings of the tomatoes, a bit of corn stock that was less than a pint, and some stock I made from the carrot trimmings left over from the carrot pickles. Simmered together it made a tasty broth and I figured, why not can it for soup later in the year?

I also put up about 12 pints of tomato-vegetable pasta sauce.

Today was a big batch of beans & bacon (pork and beans adults style), mostly in small one cup salmon jars that are perfect for lunch on the go. All you need is a microwave to reheat it and it’s perfect.

Also today was a batch of BBQ sauce that resulted in about 9 pints.

I had a bunch of baby dill left over from making pickles, so minced that up and stuffed it into a small icecube tray, added a tiny bit of water to each little cube, and froze it….those went into a ziplock bag in the freezer for dill flavour bombs over the winter. I also had a big bunch of mint left over from making jelly, so I washed that up and trimmed it and submerged it in a jar of apple cider vinegar and we will see how that is in a couple of weeks, but I have a hunch it will make delicious salad dressings 😋

So I’m basically out of ingredients except for what I need to make a small batch of cranberry pepper jelly, which I’ll probably make some time next week. I have some ideas for a few other things….cranberry pear jam, cranberry salsa, cranberry red wine jelly, rosemary peppercorn jelly…but they can all wait until the cranberries are in harvest, which is also when pears are still fresh and available.

I may make some chill garlic sauce, and will probably can a couple of additional pineapples since I’ve already used two of the jars I made this week. And I found an interesting recipe for pickled shredded carrots that I may make a few jars of to see if they appeal.

Maybe a couple of jars of plum jam…. and I saw some green sour plums at Persia Foods that I’ve never seen before and looked up and found that they can be pickled…so might try a jar of those for fun.

And chicken stock…I need to can at least a half dozen quarts of chicken stock….

Basically I’ll stop when I run out of jars 🤣

But the planned projects are complete….and I even managed to go for something that vaguely resembled a run.

Time for a glass of wine not he back deck and a bit of peace ✌️
