I was commenting to Kirk, the other night at dinner when he’d done a BBQ, how I remember when I was a kid and I’d only eat the potato out of a baked potato and leave the shell (skin) behind.
My poor mother, how I must have tried her patience. I basically hated food.
Now I feel like the skin is the best part of a potato. Crunchy, chewy, flavourful…..a perfect canvas for all the things that one can put onto a potato skin.
We pay good money for the skins of potatoes..the things I used to refuse to eat….seems ironic.
What would my grandmother think….potatoes were always inexpensive food, now we pay a lot to order “just” the skins (albeit covered in cheese and bacon and sour cream and chives….)….marketers are brilliant people.
