This could be a problem.
See, I used to bake, a lot.
Back in my early grad school days I baked, I just took 2/3 of whatever I baked to the lab and gave it away so that Kirk and I didn’t eat it all. If I hadn’t we would have gained a lot of weight. Baking was a comfort habit that I driffted away from when I started working on the Island teaching; I was away too often and was just too busy and too tired most of the time.
But now, since we are trapped at home indefinitely, and I am currenlty on leave, I find myself starting to bake again…but have no one to slough 2/3 of it off to.
I’m going to have to try to keep things under control. Yesterday it was banana muffins and today it was Mom’s old recipe for Apple Thing.
It’s not actually called “Apple Thing”, I just dubbed it that 20+ years ago. The recipe is actually called Apple Coogan/Kuchen, and it’s about the easiest thing to bake on a whim. I probably haven’t made it in 15 years but for some reason, I just wanted one. Call it comfort food, maybe it’s because I was thinking about my parents yesterday. Regardless, it was an easy thing to throw together and it never fails to please me when it comes out of the oven.
Not really cake, not really bread, but something in between. I find that it is fabulous after cooling slightly, but that it does dry a bit over the next day or two, if it lasts that long. My solution to that is to put it in a bowl and drizzle some heavy cream over it. Ice cream is also excellent with it.

Apple Kuchen
Base
1 egg
1/4 c. oil
1/2 c. milk
1 1/4 c. all purpose flour
1/4 c. whole wheat flour
2 teaspoons baking powder
1/2 c. granulated sugar
1/2 teaspoon salt
Topping
1 c. raw apples sliced
1/4 c. brown sugar
1 teaspoon cinnamon
Directions
Grease a pie dish and set aside.
Mix the egg, oil, and milk in a bowl.
Sift the flour, whole wheat flour, baking powder, sugar and salt into the bowl of liquids and stir. It will be a sticky bit of a mess.
Push the dough into a greased pan (I find dampening my fingers helps spread it out and keeps it from sticking to my hands as I do so) and poke the apple slices into the dough.
Mix the cinnamon and brown sugar together and sprinkle over the top.
Bake at 400°F for 35 minutes.
