August 9, 2015 – I looked in the freezer today and saw a pile of frozen bananas…..that only means one thing.
Time to bake some banana bread!
The sad thing is that I didn’t bake it earlier in the day. I pulled the bananas out to thaw, and then had them mixed with the sour cream and baking soda to do…whatever it is that happens and makes the magic over the hour or so that I leave it sitting before mixing it with everything else.
But then we had to run out the door, not far really, just next door to our neighbour’s for a BBQ. When we arrived I gave my neighbour a jar of jam as a gift, and presented the ice cream I’d been asked to contribute to the dinner. And when we were sitting down he and his girlfriend looked at us funny and were poking each other and making funny faces. Then he said “I don’t suppose you brought any banana bread?”
I answered no, he’d asked me to bring ice cream, but his timing was only off by a couple of hours since I’d just started the mix and wouldn’t be finishing it until later this evening.
Silly man! If he liked it so much the last time I gave him a loaf, he should have said so!!! Too bad I didn’t make it earlier, I could have run home and grabbed a fresh loaf. His timing just couldn’t have been worse. If he’d just mentioned it, even a couple of hours earlier in the day…I’d have had a loaf in hand.
Ah well, the recipe makes two loaves, I’ll have to give him the second one tomorrow instead of putting it into the freezer for later. 🙂
So if you have any bananas either going off, or already taking up space in your freezer, I highly recommend this particular recipe. It’s very good. Sour Cream Banana Bread (with chocolate chips)
